Caramelised Fruit Skewers with Orange Sauce

Try this dessert it tastes fruity but the caramel and orange completely make it fab. This ones a very easy quick recipe.

Serves 2

  • Ingredients
    4 Types of any fruits cut into cubes
    4 Tbsp. Sugar
    4 Tbsp. Butter
    4 Tbsp. Orange Sauce
    Preparation
    Prepare the caramel by melting butter with sugar and add little drops of water.
    Once prepared, add the orange sauce.
    Dip the fruits in these and mount them on skewers.
    Grill them on the griddle and serve.

Chinese Mixed Fried Rice

One of my favourites, a complete meal. This ones really a very easy quick recipe and filling too.

Serves 4

  • Ingrdients
    2 cups rice
    4 cups water
    1/2 cup cooked carrot & peas
    1/2 cup cooked chicken
    1/2 cup cooked prawns
    1/2 cup cooked egg
    1 tbs. soya sauce
    3 tbs. butter
    2 tsp. lemon juice
    2 tbs. oil
    Salt to taste
  • Preparation
    Boil the water and  keep it aside.
    Put the rice in water and let it soak for 25 minutes.
    Drain the water out completely.
    Melt butter in a wok and add rice.
    Fry the rice.
    When the rice starts cracking, add boiled water, lemon juice & salt.
    After the water has dried and the rice is cooked well, remove the wok from the fire.
    Heat oil in a pan and add the cooked vegetables, chicken, prawns and egg.
    Add Soya sauce and stir for 5 minutes.
    Add the rice & mix well.
    Serve hot.

Tip: Remember soy sauce adds a salty taste so when you add salt keep it on the lower side.
Tip: If you have cooked rice lying around from earlier you can really save time by skippig the rice soaking and cooking bit.

Gung Somsaa - Prawns with Lemon and Coconut

A super quick and easy recipe with a lemon and coconut flavour. Takes about 15 minutess. Served with steamed or boiled rice.

Serves 4

  • Ingridients
    500 gms. prawns  
    200 ml. coconut milk  
    1/4 tsp. salt
    2 tbsp. lemon juice   
    1/4 tsp. sugar  
    1/4 tsp. fish sauce 
  • Preperation
    Boil the coconut milk.
    Add prawns and let it cool for a minute.
    Then let it simmer for another minute.
    Remove the prawns from the milk.
    Add lemon juice, fish sauce, sugar and salt and stir it well.
    Now top the prawns with this sauce.
    Serve with steamed or boiled rice.
